Lentil & Orzo Salad from Southern Living 2003 Annual Recipes
1/4 c. vinaigrette dressing (my recipe below)
2 tablespoons fresh lemon juice (I did not add this because my vinaigrette has plenty of lemon juice.)
1/2 teaspoon ground cumin (I did not add this because I hate cumin with all my heart.)
1/2 teaspoon salt (I did not add this, I prefer to salt after taste.)
1/2 teaspoon ground black pepper (I did not add this, I prefer to pepper after taste.)
1/4 teaspoon dried crushed red pepper
2 c. cooked lentils
1 c. cooked orzo
1/2 red bell pepper, diced (I did a whole red pepper.)
1/2 small red onion, diced (Jared hates onion, so I did not add this.)
1 1/2 tablespoons chopped fresh cilantro (I did 2 tablespoons, I like cilantro.)
Whisk together first 6 ingredients in a large bowl; add lentils and remaining ingredients, tossing gently to coat. Cover and chill 2 hours.
Vinaigrette Recipe:
1/4 c. fresh lemon juice
1 tbls. of your favorite mustard (no, you may not use french's. it needs to be dark in color i.e. stone ground, whole grain, etc...)
couple shakes of salt
couple shakes of pepper
2-3 tbls. olive oil
1-2 tbls. balsamic vinaigrette
1 clove garlic, finely chopped
Whisk until blended nicely.
There you have it. Its yummy. Back to bed. Jared, please don't be mad at me :-)
